Recipe: Chicken Tinola

I work at a preschool and babysit on my off days so I’m surrounded by kids all day. Kids that have colds, and don’t cover their mouths when they sneeze and cough. Being exposed to that and the weather becoming super cold lately, I could feel my throat starting to get sore.

The one Filipino dish that was good for curing a sore throat (especially before singing for choir) was Chicken Tinola. I’m not sure what dish I could really compare it to.. It’s basically a chicken soup with ginger and other vegetables.

Recipe: Filipino Tomato Egg

I’m not sure if there’s an official name for this recipe, but I’ve always known it to be called “Tomato Egg”; simply because of the two main ingredients that it’s made up of. This was always a great go-to breakfast dish that the women in my family made. It seems so simple to make, yet none of my cousins and I could duplicate the way our grandmothers/mothers cooked it.

So we thank you for this awesome recipe. They sort of remind me of those Kid Cuisine microwavable brownies, but definitely a lot safer to eat. haha

Recipe: Simple Meat/Veg Foil Packets!

Okay, so it’s not a recipe per se, but it’s a pretty good method for cooking your favorite foods without a lot of clean up or dish washing.

While I’ve taken a liking to cooking a lot lately, I really really hate the cleanup process. And when it comes to cooking food in the oven, I’m REALLY not a big fan of cleaning up the oven pans. That being said, I’ve been experimenting a lot lately with cooking food in foil packets; the meats don’t lose as much moisture despite being in that much heat and it stays pretty tender. Now it’s nothing like a good broil or barbecue, but for when you’re not in the mood to use a lot of dishes, cooking meat and vegetables in foil packets in the oven is a nearly fool-proof way to whip up a delicious dinner.

Wake up, wake up, wake up

..it’s the first of the month. So get up, get up, get up, get up, get up, cash your checks and come on.

Happy December, everybody! Wow, I can’t believe 2012 is almost here. The year definitely went by really fast. So fast that I barely have any time to post about the places I eat at or the food I make. (Lies. I’m just a lazy bum.)

I haven’t really even gone grocery shopping so even if I do make food, it’s crrrazy simple with not too much preparation.

Here’s breakfast from a few weeks back. Lee is in the process of moving out of his apartment so food options in his fridge were quite limited. I grabbed whatever I could find and added eggs to it. Easy! Broccoli, tomatoes, bacon, and left over ground beef.

The batteries on the camera died so this is the only photo I have. It’s a simple enough recipe that anyone can make. You can’t really screw up scrambled eggs. It’s just a ruined omelette.

Recipe: Baked Salmon

I’ve never been a big fan of seafood. I only eat crab, shrimp and salmon, and maybe a few other fish (depending on how it’s prepared. My mom used to make this baked salmon dish that was topped with mayonnaise and onions. I didn’t really like it. (haha sorry, Mom!) I would always scrape off the mayo because it just tasted weird to me.

Then a friend of mine served a similar salmon dish at a meeting I attended a few years back. It was delicious. I even ate the mayo part of it. So I asked for his recipe and it’s been my favorite go to salmon dish ever since.

Bliss

I probably shouldn’t be eating this, but it’s soooo good! (and sort of good for you? Or not. haha.) I only ate 2 tablespoons. I thought it would help cure the headache that I had this morning. I really hate not getting enough sleep, but it was my own fault. Even though had to wake up at 7AM, I still went to bed around 1AM last night because I was too busy laughing at hilarious things that I happened to StumbleUpon.

Maybe I should try out that Intentional Power Outage Experiment and force myself to just relax and sleep with no distractions. It’ll be good for me.

But isn’t laughing good for me, too? It’s a good exercise. And so much fun!

Recipe: Filipaleo Beefsteak (Bistek)

I wanted to start posting recipes of a few of my favorite Filipino dishes with a Paleo twist, of course. Not an easy task since most of the foods I grew up with weren’t exactly, what you call healthy. Even if I was to post the original recipes, it’s still difficult because there are no actual measurements, either. If I ask any of my relatives for recipes, all they tell me is “Oh, just add X, Y, and Z to a pot and cook until the meat is tender.” And how much do I add? They don’t know. They just tell me to do it.

…okay.

So the following recipe is for Beef Steak (Bistek — hah, Filipinos and their shortcuts).  It’s basically just beef, soy sauce, calamansi juice, and onions. That’s it. It’s got this tangyness that I love and when mixed with rice, it’s just awesome. The rice soaks in the flavor and neutralizes the sourness so it’s a perfect blend of yum.

Recipe: Cauliflower Rice

Rice was a HUGE staple in our family. I ate it everyday with pretty much anything. So giving up rice for the rest of my life wasn’t going to be easy. Especially since every protein dish I ate was paired with rice.

I did some Internet searching and found a few recipes for cauliflower rice. It’s pretty similar to rice. Not much flavor to it, looks the same, and a lot healthier for you. It’s slightly a slightly firm, but tender alternative.
